Four Hours Through Norway

You start with an aperitif in the bar area, then step into a tall dining room arranged around a brightly lit open kitchen. Cooks carry out their own creations, describing each ingredient, its origin and the method behind it. Across roughly four hours the menu journeys the length of Norway, from icy Arctic seas to the woods and smallholdings near the capital, tracking the season precisely. Nothing is printed beforehand; you eat what the country is yielding that day, as the kitchen interprets it.
Esben Holmboe Bang launched Maaemo in 2010 and went on to become the first chef in Norway awarded three Michelin stars. He championed purely Norwegian produce before the rest of the fine-dining world caught on, and the restaurant is still wholly committed to its homeland.
From Scarcity to Stars

For centuries Norway was poor, and its food was shaped by making do: salting, drying and curing so that humble produce could see a family through the long cold months. Dried cod, salted lamb, reindeer heart and soured dairy were survival food, their methods passed on by hand and rarely written down or admired. Then oil was found in the 1970s, the country grew rich within a generation, and much of that heritage was forgotten.
Holmboe Bang, Danish-born in 1982, arrived in Oslo in 2001 and opened the restaurant at 28, at the end of 2010, determined to cook only with Norwegian produce and to treat the old preserving traditions as the bedrock of the kitchen rather than a past to escape. Just fifteen months later, in March 2012, Maaemo became the first Nordic restaurant to be given two stars in its debut rating, and the third arrived in 2016. The return to tradition isn’t nostalgia; it’s simply the clearest way to connect a dinner to the ground it grew from.

There are only eight tables. Elsewhere in Oslo and across Scandinavia, even starred restaurants can usually be reserved weeks out online; Maaemo is different, releasing tables at set times that fill almost as soon as they open, whatever the season. Out Of Office watches the release and secures your table. Once you’re seated, the kitchen sets the pace, and the staff know the menu, sourcing and producers well enough to answer anything you ask. It’s a milestone dinner for a couple or a small group of friends.
Course by Course

Drinks and the first small bites in the lounge set the tempo before you move through. From every seat you can see into the kitchen, and chefs often carry their own dishes out, so kitchen and dining room work as one and the meal flows as a single piece. Early courses are small and direct, introducing the land’s ingredients before the menu gathers depth and richness, and the middle of the menu is usually where the kitchen does its most thoughtful work, pairings that aren’t obvious on paper but make perfect sense on the plate.
The house-made bread is, for most guests, one of the evening’s highlights, served with butter from one particular farm, and the provenance of every element is shared simply by whoever cooked it. Dessert brings you back to the landscape, with dried blossoms, cloudberries and browned butter, and four hours give the evening room to unfold.
