BABA, on George Street, is a dining destination in its own right, its bold turquoise interiors setting the scene for Levantine-inspired cooking over a charcoal grill, with Scottish lamb, beef and seafood sharing the menu with mezze plates built for sharing. Back at the hotel, The Garden is the more relaxed counterpart: a light-filled, leafy space serving seasonal dishes with Mediterranean and Scottish influence from morning coffee through to cocktails and Champagne.
