A Michelin Key-awarded boutique hotel on the Colombier hillside, Gyp Sea Saint Barth brings a vivid Côte d’Azur sensibility to St. Barts’ colonial architecture, with 22 bungalows and villas looking out across the tropical gardens and Flamands Bay below.

Interiors are the work of design duo Jocelyne Sibuet and her daughter Marie, and the result is anything but restrained: handmade fabrics from Peru and Tunisia, rattan furnishings, pineapple motifs, four-poster beds draped in netting, and roll-top baths sit alongside custom pieces collected from Jaipur and Indonesia. Every room is individually decorated, and the effect reads as genuinely eclectic rather than simply busy.

The Pure Altitude Spa handles wellness with botanical treatments and a signature coconut ritual, while the poolside terrace, surrounded by mango, banana and bougainvillea, is the natural setting for a long afternoon.

A complimentary shuttle connects the hotel to the Gyp Sea Beach Club on Pelican Beach, and the rums and cigars bar rounds out the evenings with over 120 aged rums and a proper fumoir.

Bungalows


Four bungalow categories form the core of the hotel, all set within the Colombier hillside gardens and individually decorated with the property’s signature mix of handmade fabrics, rattan furnishings and four-poster or statement king beds.

Plantation Bungalows (45 to 48 sq m) are the most garden-focused, with terraces looking over the pool and tropical grounds. The Caribbean and Tropics Bungalows (49 sq m) shift the outlook to Flamands Bay and add roll-top baths alongside the walk-in showers. The Family Bungalow builds on that footprint with a separate bunk room for younger guests and its own Flamands Bay-facing terrace.

Suites and Villas


The Havana Suite (73 sq m) is the most distinctive room in the hotel, with a four-poster king bed under netting, a clawfoot bathtub, and a covered terrace Jacuzzi facing the bay. The Swimming Pool Suite takes things further at 70 sq m, with a private 10 sq m pool set within a 120 sq m outdoor living area at the highest point of the property, giving some of the widest sea views on site. The two-bedroom Master Villa (105 sq m) mirrors that outdoor footprint with the same private pool setup, adding a second king bedroom and bathroom for groups or families of up to four.

Beach Houses


Four standalone beach houses on Saint Jean Beach operate as a separate category within the property, located a ten-minute drive from the main hotel and right alongside the Gyp Sea Beach Club. Ranging from 65 to 103 sq m and sleeping two to four guests, each comes with a private heated pool, full kitchen, garden, large terrace and dedicated butler service.

The setting is noticeably livelier than the hillside hotel, making them a strong choice for guests who want direct beach access and a more social atmosphere alongside the privacy of a standalone villa.

Food and Drink

The main hotel restaurant serves Mediterranean-leaning dishes poolside, in the gardens, or in the lounge, running from lighter lunch plates through to evening menus built around grilled fresh fish, truffle pasta and Caribbean-influenced sharing dishes.

The Chef’s Table offers a more formal option: a bespoke tasting menu showcasing the kitchen’s take on French Caribbean cuisine, available at the hotel by reservation. Breakfast is included in all rates and served à la carte each morning.

The rums and cigars bar is a destination in its own right, with over 120 aged rums poured from a dark mahogany bar beneath slowly turning ceiling fans. Classic cocktails and rum punches fill out the drinks list, and the fumoir adds a genuinely old-world touch that suits the colonial setting.

The Gyp Sea Beach Club on Pelican Beach runs its own food and drinks program separately, with a full menu served daily until late.
