Pimms is the resort’s flagship fine dining restaurant, serving elevated Anguillian cuisine and Caribbean classics in an open-air waterside setting. Uchu brings authentic Peruvian flavors and a ceviche bar to the pool terrace, while Cip’s by Cipriani offers a casual Italian menu of antipasti, pasta, and the signature Cipriani carpaccio. The Cap Shack serves Anguilla’s national dish, along with grilled lobster and rum punch, right on the sand.
