Dalmatia, the region around Split and Dubrovnik, gets most of Croatia’s tourist attention and most of its food-and-wine marketing. But Istria’s cooler climate, denser forests, and centuries under Venetian rule produced a genuinely different food culture: white and black truffles rival those of Piedmont, olive oil production rivals Tuscany’s, and the region’s indigenous grape varieties, Malvazija for whites and Teran for reds, are found almost nowhere else in the world.

What to Eat and Drink

Truffles define Istrian cooking more than any other ingredient. The forests around Motovun and Buzet produce both white and black varieties, and autumn truffle-hunting excursions, typically with a trained dog and a local hunter, are one of the region’s signature experiences.

Malvazija and Teran are the wines to seek out. Malvazija, a crisp, aromatic white, pairs naturally with the region’s seafood, while Teran, a deep, acidic red, has a long history as both a wine and, in Istrian folk medicine, a tonic for iron deficiency.

Olive oil production runs deep here too, with several family-run groves offering tastings alongside their wine.

Where to Go

Rovinj, a former Venetian fishing town on the coast, is Istria’s most photogenic base, with cobbled streets, a hilltop church, and a genuine concentration of good restaurants for its size. Motovun, inland and hilltop, sits at the center of the region’s truffle country and hosts its own truffle festival each autumn. Poreč and Pula, the latter home to a 2,000-year-old Roman arena, round out the coast with more Roman history than Dalmatia typically offers.
