Vineyard visits and tastings introduce the country’s “new latitude” wines before continuing to Ayutthaya, the former Siamese capital, where ancient temple ruins and traditional desserts connect food with history.

Days 1-3: Bangkok

Your journey begins in Bangkok, the nation’s buzzing capital. After arrival and check-in, the first days are centred on the capital’s food culture and historic core.

Explore the temples and royal quarter of Rattanakosin, including Wat Pho and the Grand Palace complex, before taking to the Chao Phraya River for a refined dinner cruise aboard a restored rice barge. In contrast, another evening reveals Bangkok’s street food scene by tuk tuk, sampling local favourites and visiting markets that come alive after dark.

A hands-on cooking class at the Blue Elephant Cooking School deepens the experience. After visiting a fresh market to understand ingredients and spices, you prepare classic Thai dishes yourself, learning the balance of sweet, sour, salty and spicy flavours that define the cuisine.

Days 1-3: Bangkok

Day 4: Khao Yai National Park

Leaving the capital, travel north-east to Khao Yai National Park, a UNESCO-listed reserve known for jungle landscapes and waterfalls. A guided trek introduces the region’s natural contrast to Bangkok, with forest trails, panoramic viewpoints and cascading waterfalls.

Accommodation here is in a tented safari-style lodge, maintaining the sense of immersion in nature while offering comfort. This stop adds a rural and ecological dimension to the itinerary before returning to the culinary focus.

Day 4: Khao Yai National Park

Days 5-6: Ayutthaya

Khao Yai is also Thailand’s most established wine-producing region. Visits to GranMonte and PB Valley vineyards introduce “New Latitude Wines,” with guided tours explaining viticulture techniques and tastings of locally produced varieties.

From here, continue to Ayutthaya, the former Siamese capital and now a UNESCO World Heritage Site. Explore temple ruins by open-air tuk tuk, including Wat Mahathat and Wat Chaiwatthanaram, before sampling the city’s famous roti sai mai and learning to prepare traditional Thai desserts such as Thong Yip and Thong Yod.

This brings your Central Thailand portion to a close – rich with history, regional produce and experience of hands-on culinary tradition.

Days 5-6: Ayutthaya

Days 7-9: Phuket

From Bangkok, fly south to Phuket, where the pace shifts completely. After structured cultural touring, the final three nights are intentionally slower.

Stay in a well-located beachfront or luxury resort, with time to relax by the pool, enjoy spa treatments, or explore the island’s coastline. Optional experiences can include island-hopping in Phang Nga Bay, a private longtail boat charter, or a Phuket Old Town food walk for those wanting to continue the culinary theme in a more relaxed format.

Phuket provides a practical and comfortable end point, with easy international flight connections and a softer landing after the cultural depth of Bangkok and Ayutthaya.
