As the clock strikes 11 p.m., the mayor echoes a replica of Hidalgo’s cry, and the jubilant crowd responds with enthusiastic shouts of “¡Viva México!” The night sky lights up with fireworks, and an atmosphere of sheer merriment engulfs the surroundings. The following day, September 16, is dedicated to civic ceremonies and spirited parades, honoring the country’s independence and fostering a deep sense of national pride.

The gastronomic riches of Oaxaca take the spotlight in this delightful food festival, Oaxaca Flavors, held over three days at the end of September. The vibrant event unfolds at both the Oaxaca Convention Center and various restaurants throughout the city. With a total of 70 skilled Oaxacan chefs and 20 talented local artists participating, the festival promises an unforgettable experience for all attendees.
